When I'm in a hurry, I always go for recipes that have been proven themselves over time. Couscous gives structure to this salad and absorbs the flavors. Have a go with this healthy salad, use it to surprise on sunny days and take the left-overs to work next day!
TIME: 15 minutes
GROCERIES:
150g couscous, 200ml water |
150g chicken filet, cut into cubes |
200g fresh peas |
100g baby spinach or corn salad |
30g cashew nuts |
75g feta cheese, cut into small cubes |
100g cherry tomatoes, cut in halves |
12 mint leaves, roughly cut with some scissors |
Juice of 1/4 lemon |
3 tbsp extra virgin olive oil |
1tsp soy saus, salt, pepper |
